3 Healthy Salad Dressing Recipes

Green Goddess Recipe

1/2 Avocado

2 Scallions white and green

1/4 Cup of each:

1/4 Cup Basil

1/4 Cup Cilantro

1/4 Cup Parsley

1/4 Cup Mayonnaise or Mayonnaise substitute

1/4 Cup Lemon Juice Fresh Squeezed

1/4 Cup Water

2 Tablespoons Honey

3 Tablespoons Olive Oil

2 Tablespoons Champagne Vinegar

1/8 teaspoon tarragon dry

Instructions

Add all ingredients to a blender and mix until creamy. This dressing will keep in fridge for 1 week.

Creamy Tahini Recipe

3/4 Cup Olive Oil

3/4 Cup Tahini

2 Garlic Cloves Minced

6 Tablespoons Lemon Juice

2 Tablespoons Dijon Mustard

1/2 teaspoon salt

6 Tablespoons water

Instructions

Add all ingredients to a blender and mix until creamy. If it is too thick add more water or lemon juice depending on how intense of a lemon flavor you enjoy. Makes 1.5 cups of dressing.

Carrot Ginger Recipe

2 Carrots medium

2 Shallots peeled and rough chopped

1/4 cup Ginger minced

2 Tablespoons White Miso

1/4 Cup Champagne Vinegar

2 Tablespoons Honey

2 Tablespoons Sesame Oil

1/2 Cup Avocado Oil

1/4 Cup Water

Add all ingredients to a blender and mix until creamy. This dressing will keep in the refrigerator up to one week.
